Baked Cheezy Chicken

3-4 boneless chicken breasts, cut in half
cooking spray
2 eggs
1/4 c milk
1 1/2 c Italian style bread crumbs
Stick butter - I use real butter
Sliced American cheese
Shredded mozzarella cheese

Spray bottom of 9X12 baking dish with cooking spray, i.e. Pam.
Beat eggs and milk in a bowl. Place bread crumbs in another bowl.
Coat chicken in eggs/milk mixture then in bread crumbs and place in baking dish.
Put one or two thin pats of butter on top of each chicken piece. Cover dish with foil.
Bake at 350 for 45 min to 1 hour or until done. Remove foil and place a cut-to-fit slice of American cheese on each piece of chicken and top with shredded mozzarella cheese. Do not replace foil. Bake at 350 for another 4-5 minutes or until cheeses have melted.

Serves 4-5
Prep: 5-7 minutes
Bake: about 1 hour

Mmm, this looks good, Amy. The easiest way to get my kids to eat anything is to cover it in cheese. Thanks!
