Oatmeal Raisin Pecan Cookies (whole wheat flour)

I love this recipe, I have made these cookies twice so far. I love good recipes made with whole wheat flour. Makes me feel better about snacking. :)

We are still not doing nuts here and I'm not a huge fan of raisins so I subsitute 1 cup of chocolate chips instead.

Preheat oven to 350F

Baking sheets sprayed with nonstick vegetable spray (I don't bother, I use parchment paper instead).

1/2 cup brown sugar
1/4 cup soft margarine (I use butter)
1 egg
1 tsp vanilla
1/2 cup rolled oats
1/4 cup whole wheat flour
1/4 cup wheat germ
1/4 cup pecan pieces
1/4 cup raisins
1/2 tsp baking powder

In a large bowl or food processor, beat together sugar, margarine, egg and vanilla until well blended.

Add rolled oats, flour, wheat germ, pecans, raisins and baking powder; mix just until incorporated.

Drop by heaping teaspoonfuls 2 inches apart onto baking sheets. Bake for 12 to 15 minutes until browned.

Dough can be forzen for up to 2 weeks.

Recipe says that this makes 30 cookies. It does not. I always double the recipe, which makes about 30 cookies.

If you don't have wheat germ add another 1/4 cup of rolled oats.

Dough might seem a little wet, but it works.

Calories 57 per cookie.
