4 eggs 2 c. sugar 1 ¼ c. oil 3 c. flour 1 tsp. baking soda 1 tsp. salt 1 ½ tsp. vanilla 3 c. apples (peeled, cored and sliced) 1 c. black walnuts ¾ c. coconut Blend together 3 oz. softened cream cheese ½ box (10x) confectioner's sugar ½ stick of butter or margarine Mix sugar oil and vanilla. Add eggs one at a time, mixing well. Sift together flour, salt and soda. Toss with apple slices, nuts and coconut. Add to liquid and blend well. Pour into greased and floured loaf pan. Bake for 1 ½ hours at 325°.
