Canned Sweet Potato for casserole--need recipe!

I'm looking for a good recipe for sweet potato casserole. I do like it with the mini marshmallows on top. I'm cheating this year and I bought canned sweet potatoes! Is there any easy recipe that you use that is good? Thanks.

Sweet Potato Cornbread

1 8-inch or 9-inch round pan (cake pan)
2 Tbs Brown Sugar
1 Egg white
¼ C Canola Oil
¾ C Buttermilk
½ C pureed Cooked Sweet Potato
1 C Martha White Cornmeal (I like this brand better)
1 C Unbleached White flour
½ tsp Salt
1 Tbs Baking Powder

Preheat over to 350 degrees. Spray an 8-inch square or 9 inch round baking pan with a light coating of vegetable oil. Set aside.
In a large bowl, beat the brown sugar, egg, egg white, canola oil, buttermilk and sweet potatoes until frothy. Sift together the cornmeal, flour, salt and baking powder into the mixing bowl. Gently fold the ingredients until just mixed. Pour the batter into the oiled pan and bake for 20 - 25 minutes, until a knife inserted into the center comes out clean. Serve hot or at room temperature.

Okay, not the one with the marshmallows on the top, but this one is yummy, just the same! I'm sure you could use canned potatoes, if you wanted to.

Sweet Potato, Carrot, and Apple Gratin

Flavored with orange juice and ginger, this gratin makes a perfect accompaniment for a main dish of pork or ham.

4 cups water
4 cups (1/2-inch) cubed peeled sweet potato
2 cups thinly sliced carrots
1 1/2 cups diced peeled Granny Smith apples
1/3 cup orange juice
1/4 cup dried cranberries
2 tablespoons brown sugar
1 teaspoon grated peeled fresh ginger
1/4 teaspoon salt
1/4 teaspoon pepper
Cooking spray
3/4 cup (3 ounces) shredded fontina or cheddar cheese

1. Preheat oven to 375 degrees.

2. Combine first 3 ingredients in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 4 minutes or until vegetables are tender. Drain well.

3. Combine sweet potato mixture, apple, and next 6 ingredients (apple through pepper) in a large bowl; toss gently. Spoon into a 6-cup gratin dish coated with cooking spray; bake at 375 degrees for 25 minutes. Sprinkle with cheese; bake an additional 10 minutes or until cheese is golden brown.

Yield: 6 servings (serving size 1-cup)

Note: Besides the nutrients listed below, each serving provides 28,295 IU's vitamin A and 31mg of vitamin C.
