Oven Fried Chicken
Prep: 14 minutes Cook: 45 minutes Yield: 4 servings

You might enjoy this alternative to fried chicken more than you think. The crispiness comes from a corn flake coating and a high oven temperature.

Ingredients:
3 cups corn flakes cereal, crushed (makes about 1 cup)
1/3 cup grated parmesan cheese
1 teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon pepper
1 (2 to 3 pound) package of assorted chicken pieces, skinned
½ cup butter or margarine, melted

• Combine first 5 ingredients in a large heavy duty, zip-top plastic bag; seal and shake well.
• Dip chicken pieces in butter, 2 at a time, and place in bag. Seal and shake to coat chicken completely. Remove chicken, and repeat with remaining chicken pieces..
• Place chicken on a slightly greased pan ; sprinkle remaining corn flake crumbs over chicken pieces.
• Bake, uncovered, at 400 degrees for 45 minutes or until done. Serve hot.

That does sound good Heidi. I am having chicken tonight, but don't have any cornflakes left.

On a side note. LOL. I use the same recipe, but dip the chicken in sour cream and then in italian bread crumbs. That was a weight watcher tip.
