Amy's Chicken Gumbo

3 tbsp oil
3 tbsp all purpose flour
1tbsp Kitchen Bouquet
1 tbsp dried parsley
2.5-3.5 lbs of split chicken breasts (skin and bones on)
1/2 lb sliced smoked sausage
Gumbo Filet
1 tsp salt
1/4 tsp pepper
pinch red pepper
Dash worcestershire sauce
2 onions, chopped
1 green pepper, quartered
2 celery sticks, halved
3 green onion stalks (chop bottoms, save tops)
2 chicken bouillion cubes
1 Bay leaf
1/2 tsp thyme
2 quarts water

In a large deep pot, brown chicken in oil, 5 minutes on each side, remove to cool. When cool, pull off meat and cut into chunks. Fry sausage in same oil for 5 mins, remove to cool. Add flour to oil (making roux) and cook over medium low, stirring once every minute until golden brown (about 8 minutes). Add water and ALL ingredients *EXCEPT* green onion tops, parsley, and gumbo filet. Bring to a boil over highest heat, uncovered. Reduce to medium-high heat and cook 35 minutes. Remove from heat, add sliced green onion tops, gumbo filet, and parsley. Remove green pepper and celery, serve over rice.

I gotta figure out where I can buy the Gumbo filet! I couldn't find it at my normal grocery store!
