Flounder alla Milanese

Six 1/4-lb. flounder, sole or other whitefish fillets
Juice of 1/2 lemon
1/4 cup olive oil
1 small onion, slivered
3 plum tomatoes, chopped
1 jar (7-1/2 oz.) roasted red sweet peppers, drained and slivered
1/2 cup stemmed shredded arugula leaves
1/4 cup minced flat leaf parsley
1/2 tsp. dried thyme
1 tsp. fresh, chopped oregano
1 tsp. fresh, chopped sweet basil
1/2 cup dry white wine
Salt and pepper to taste
2/3 cup small pitted ripe black olives


1. Sprinkle the fish with lemon juice. Over medium-high heat in a very large saute pan, heat the oil and saute the onion 2 minutes. Add the tomatoes, peppers, arugula and parsley, and saute 5 minutes. Stir in the thyme, oregano, basil and wine, and simmer 1 minute. Season with salt and pepper, and add the olives.
2. Push the vegetable to one side, and slide the fillets into the pan. Cover the fillets with the vegetables and sauce, and cover the pan. Reduce the heat and simmer 10 minutes. Serve at once. Makes 6 servings.
