BROCCOLI SOUP

BROCCOLI SOUP

2 T. margarine
6 cups milk (use skim to reduce fat)
1 clove garlic, halved
2 - 10 oz. pkgs of frozen or 1 ½ lb. of fresh broccoli, finely chopped
¼ c. finely chopped green onion
1 small tomato, seeded and chopped
½ tsp. salt and a dash of pepper
¼ c. corn starch mixed into ½ c. water


In a large saucepan, brown garlic in margarine and remove. Add ½ of the broccoli, tomato and onion and saute`. Add milk. Cook over low heat for 15 minutes. Allow to cool slightly. Pour into a food processor or blender and blend until smooth. Return to pot. Add remaining broccoli. Simmer, stirring occasionally, for 10 minutes. Add corn starch mixture. Stir until thick and smooth. Serve with grated cheese and croutons.
