BLOODY MARY SOUP A TAILGATE WARM UP

2 med. onions, finely chopped
6 stalks of celery, finely chopped
4 T. butter or margarine
2 T. sugar
4 T. tomato paste
2 - 46 oz. cans V-8 juice
4 drops Tabasco
3 T. Worcestershire sauce
1 lemon ½ squeezed ½ thinly sliced
½ tsp. salt
½ tsp. pepper
16 oz. vodka
¼ c. chopped fresh parsley


Saute onion and celery in butter over medium heat in soup pot until tender, about 10 minutes. Remove and puree in blender or food processor. Add tomato paste and 1 c. V-8 juice to drippings. Stir until smooth. Add sugar, remaining V-8, Worcestershire, lemon juice, salt and pepper. Add pureed vegetables. Cover and simmer 30 minutes. Add vodka if you are serving immediately. Taste, adjust seasonings and add Tabasco. Serve in mugs. Garnish with thin lemon slices and parsley. About 18 - 6 oz. servings
