PORK CORDON BLEU

1 large pork tenderloin
8 large slices of boiled or imported ham
8 large slices of Swiss cheese
8 large slices of mozzarella cheese
2 eggs slightly beaten
½ c. bread crumbs
3/4 c. flour
¼ tsp. salt
¼ tsp. pepper
1 T. parsley
¼ c. cooking oil
¼ c. margarine
1 large lemon


Mix bread crumbs, flour, salt, pepper and parsley in wide shallow bowl. Slice the tenderloin into 8 equal pieces. Pound with meat mallet until each slice is about 5 to 6 inches across. Cover half of each pounded pork portion with 1 slice each of ham, swiss and mozzarella. Fold in half. Dip into egg. Dip into bread crumb mixture, coating evenly. Pour cooking oil into a large skillet. Add margarine. Preheat oven to 350 degrees. Fry pork over low heat until golden brown and cheese is melting. Drain on paper towels. Place on cookie sheet and bake at 350 F for 15 minutes. Serve with lemon slices.
