*MY* All Time Favorite CHICKEN ENCHILADAS

I saw the other chicken enchilada post and thought i'd post my favorite one. I can eat half the casserole... they are sooooo good, and easy to make! Really!


2 cups chopped chicken (or turkey)
1 cup chopped green bell peppers
1 package cream cheese (8 oz.), cubed
1 jar (8 oz.) salsa, divided
8 (6 inch) flour tortillas
3/4 lb. Velveeta Cheese Spread, cut up (Mmmm....)
1/4 c. milk

Stir Chicken, bell pepper, cream cheese and 1/2 cup salsa in saucepan on low heat until cream cheese is melted.

Spoon 1/3 cup chicken mixture down center of each tortilla; roll up. Place, seam-side down, in lightly greased 12x8 baking dish.

Stir process cheese spread and milk in saucepan on low heat until smooth. Pour sauce over tortillas; cover with foil.

Bake at 350 for 20 minutes or until thoroughly heated. Pour remaining salsa over tortillas.

ENJOY!!!!!


Someone has to try these and tell me how you like them. Its a bit of an obsession with me, lol! :)

Sounds really good, except for the bell peppers. Can I skip them? Is the chicken already cooked? 20 minutes doesn't seem like long enough to fully cook it. I can't wait to try this. I love new chicken dishes and you can't beat chicken, cheese, tortillas, salsa and more cheese! :)

Cori, I don't see why you cant skip the bell peppers. And you have to cook the chicken beforehand or buy it precooked. Let me know if you make it!

OK, I'll let you know. I have this week's meals planned but I'll try to work them in for next week. They sound yummy!

My SIL makes enchiladas for Thanksgiving and Christmas, they are not much for the Traditional food :( I will have to try this out and see if I can show her up...lol

They do sound really good which is a big deal since nothing sounds good these days..:)

These are the cheesiest darn things I've ever eaten and that's not a bad thing! I loved them and my dks, that are notoriously hard to please, also really liked them. We did end up skipping the bell pepper. Yummy! And it made enough for lunch tomorrow. Thanks, Melissa!

Its great that everyone enjoyed them! With all that cheese could you imagine the calories? Yikes! But they are a personal favorite of mine!

Melissa, we had your enchladas last night and they are SO YUMMY! My dh and I both loved them. The kids didn't, but they don't like anything other than pizza and hotdogs :(

Melissa, we gave your recipe a try last night and it was really good. I made four with chicken and four with ground beef since dh doesn't care for chicken in Mexican food and both types turned out great. Even my kids liked them, and dd is a picky eater most of the time. This is a recipe that I will be making again. Thanks for posting it.:)
