Curried chicken salad

Yum!! Just whipped this up on a whim. Grill a couple - I did 3 - boneless chicken breasts, chop them up and mix them with curry paste, chopped celery, red grapes that you split in half, raisins, dried apricots, some mayo and some Mango chutney. Yum, yum, yum. Might add some almonds next time too.

I serve something similar on an open faced croissant for brunches. A huge hit!

I make a curried tuna salad. That's great for sandwiches and on crackers.

CURRY TUNA SPREAD

2 (6 ½ oz.) tuna in oil
½ c. raisins chopped
¼ c. peanuts chopped
¼ c. onion chopped
¼ c. green onion chopped
¼ c. plain yogurt
½ c. mayonnaise
1 tsp. lemon juice
¼ tsp. salt
½ tsp. curry powder


Drain tuna well. Discard oil. (Most cats and dogs love it as a treat). Blend all ingredients together well. Cover and refrigerate 2 hours. Serve on toast, croissant or crackers.
