Strawberry Bread or Muffins

3 cups flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
3 eggs, beaten
1 cup vegetable oil
2 (10 ounce) packages frozen strawberries, thawed
or two pints fresh strawberries soft, but not rotting, stemmed and hulled



Combine first 5 ingredients in a large mixing bowl; make a well in center of mixture. Combine remaining ingredients; add to the dry ingredients, stirring until well combined. Spoon mixture into 2 greased and floured 9 x 5 x 3" loaf pans, or into lined muffin pans. Bake at 350º F for 1 hour, 40 minutes for muffins. Cool loaves in pans for 10 minutes; remove from pans
and let cool completely on wire racks. You may add 1 cup chopped walnuts or pecans to batter, if desired.
