Barbecue Chicken for Buns

I LOVE my Fix It and Forget It cookbook. Yesterday, DD14 and I saw a commercial for BBQ beef on a bun at some restaurant (maybe TGI Friday's) and she thought that sounded good. So, I dug out my cookbook and started looking for BBQ beef recipes. Then found this one for BBQ Chicken and thought that sounded good, too.

Barbecue Chicken for Buns

6 cups diced cooked chicken
2 cups chopped celery
1 cup chopped onions
1 cup chopped green peppers
4 tbsp butter
2 cups ketchup
2 cups water
2 tbsp brown sugar
4 tbsp vinegar
2 tsp dry mustard
1 tsp pepper
1 tsp salt

Combine all ingredients in slow cooker.

Cover. Cook on Low 8 hours.

Stir chicken until it shreds.

Pile into steak rolls and serve.

Serves 16-20

I made half a recipe and omitted the salt, since there is already so much sodium in ketchup (hubby and I have blood pressure problems. Everyone liked it! I made it last night, so I only had to take it out of the fridge and turn it on this morning.
