Coconut Blender Pie

This one is so simple it's unbelievable. You need a 10" piepan, if you only have 9" DON'T pour all the batter into it, you can put a little of it into a tart size pan. You might think it will fit in the 9" but trust me, you will have a mess to clean in your oven.I couldn't believe that when it was done that there would be a crust on the bottom but lo and behold there was.


2 cups milk
1 cup shredded coconut
3/4 cup sugar
1 teaspoon brown sugar
1/2 stick SOFTENED margarine
4 eggs
1 teaspoon vanilla
1/2 cup flour

Put ingredients in the blender as listed and blend for 1 minute. Pour into a 10" greased nad floured piepan. Bake for 45 minutes at 350 degrees. Being that all ovens may vary, test with toothpick in center of pie before removing it from oven.

I've also made this same recipe substituting bananas in place of coconut. You'll really enjoy this pie. The best part is not having to make a crust.
