CUBE STEAK: Need some ideas tonight.

I've got three pieces of cube steak that's been frozen for some time because the other pieces from the same "batch" were very tough. Usually I just bread and cook on stove. Need something new that will help tenderize the though meat.

I make this a lot the kids really like it!

Cube steak/Round steak
package of stove top stuffing favorite flavor
2 cans beefy mushroom soup

Pound the steak with a tenderizer until it is evenly flat all over. Cut into 6" pieces. Prepare stove top according to directions, when it is done mound a large spoonful onto each piece of meat. then roll up the meat and secure with toothpicks. Brown the bundles in a skillet with 2 T olive oil. when they are all brown pour the soup and 2 cans of water over the meat and simmer for about 30 mintues or until meat is tender. I serve this with rice and baby carrots! It really doesn't take very long to make and is quite yummy it also makes shoe leather edible, If I am going to be gone I brown the bundles then transfer them to a crock pot, pour over the soup and water and cook on low for 4-6 hours.....I love it because it makes own gravy and is a great way to use cheap meat!

I really don't have a recipe I learned this one at my momma's knee but it is very simple to make, if you don't have beefy mushroom soup I have used two jars of Heinz beef gravy and 2 cans mushrooms and only 1 cup of water!

Sounds yummy, but I dont have anything but the steak LOL. No stove top, no rice, no gravy, no mushrooms, no soup. I just might have to go to the store.

DH surprised the heck out of me and did the grocery shopping on Monday when I wasn't home. However, he hasn't done the shopping in 4 years so we are missing a few staples :). But I'm not saying a word to him about it...I'm just so happy he took the initiative!
