1 pkg lemon cake mix WITH pudding in the mix
3 cups of cool whip
1 egg
3 tsp of shredded grapefruit rind
3 tsp of shredded orange rind
1 cup confectioners sugar

Mix all ingredients except confectioners sugar in a mixing bowl till well blended and sticky. Drop by spoonfuls into confectioner sugar and roll around till covered in sugar. Put on cookie sheet and bake at 350 for 10 to 12 minutes, they may not look done but they are! Let them cool completely. Enjoy!!!

Here is a silly question - do you have to buy the fruit and grate the rind? or can you buy the grated rind? Please don't laugh - I've always wondered.

I would like to try this recipe - it sounds scrumptious!

i grated it myself with the fine part of a cheese shredder which makes it mushy or you can put in a blender or food grater as long as its not big chunks.

Thanks Kenna! This sounds so easy and yummy! No wonder you won an award. Can't wait to try it. I love citrus flavored stuff. I am really not a huge fan of chocolate. I can hear the gasps now! :)

Kenna, when you are saying the rind, do you mean to zest it? Or is this the whole rind, pith and all?

By Ladypeacek on Sunday, May 23, 2004 - 01:13 am:

to zest it, i stop grating once i get to the white part.

By Texannie on Sunday, May 23, 2004 - 11:45 am:

Ok..got it. Never thought of zesting as grating so that threw me off! LOL
