Can anyone help with an egg salad recipe????

Emily, I don't really use a recipe. I just take some hard boiled eggs (usually six)and mash them up, add some salad dressing(Miracle Whip) or mayonnaise until it is the consistency I want, add a little sweet pickle relish, salt and pepper, and sometimes garlic powder or dill (whatever I'm in the mood for).

Egg Salad is extremely simple:

Makes about 4 sandwiches (depending on size of eggs and amount of filling per sandwich)

4 hard boiled eggs(cooled)
Mayonaise (2-3 heaping tbsp)
1/8-1/4 cup finely chopped onion(can be omitted)
Pinch of chopped parsley (if desired)
Pinch of Paprika

Peel boiled eggs
Use fork to chop eggs into 1/2" size pieces in bowl.
Add chopped onions to taste (adds zing!)
Add mayonaise gradually until blended mixture holds together (several tbsp).
Salt and Pepper to taste
Spread on bread

Typically tastes better if prepared the night before and allowed to season in refrigerator.

I found this frequently in my brown bag lunch when I as a kid!

I make a Breakfast egg salad that my kids love. Basically, it is eggs, mayo, salt and pepper, a little shredded cheddar and some crumbled bacon. I'll make it one evening (my kids love to "hatch" the eggs and then mash them) and they have it the next morning on toast.
