MINI CRAB PUFFS

1 6 ½ oz can crabmeat or 6 oz. imitation crabmeat
½ c. (2 oz.) shredded Cheddar cheese
3 scallions, minced
1 tsp. Worcestershire sauce
4 eggs
1 tsp. dry mustard
¼ tsp. salt
1 c. water
½ c. butter or margarine
1 c. flour

Mix together first seven ingredients. Set aside. In a large saucepan, heat water and butter to boiling. Remove from heat immediately add flour: beat until mixture leaves sides of pan and forms a ball. Add eggs, one at a time, beating until each is incorporated completely. Beat in crab mixture. Drop teaspoons of dough about 1 inch apart onto ungreased baking sheets. Bake at 400° for 20 to 25 minutes, until golden brown. Cool and freeze. To serve, reheat frozen puffs at 350 ° for about 10 minutes. Yields about 5 dozen.

Bea, do these have to be served piping hot or are they still good if they cool?

By Bea on Monday, February 9, 2004 - 11:45 pm:

They are much better warm. If serving over a longer time is the issue, reheat about a dozen at a time, and serve as they are hot.

Thanks.
