TEXICALLI CRAB & SHRIMP

¼ lb. frozen baby shrimp or salad pieces, chopped
¼ lb. shredded crab meat or artificial crab meat shredded
2 T. lemon juice
1 c. chopped dill pickle
4 T. dill pickle brine
2 ½ T. grated horse radish
1 - 12 oz. bottle chili sauce
1 (6-8) oz. can tomato paste
2 - 8 oz. bricks cream cheese


Mix all the ingredients except cream cheese together well. Divide into two portions. Spoon each portion over a brick of cream cheese and serve with crackers. Shrimp and crab sauce freezes well for later use. The sauce part can be frozen for use later. I usually only put out 1/2 of a brick of cream cheese and 1/4 of this recipe at a time.

REUBEN BAKE

8 oz. Swiss cheese (shredded)
1/2 lb. corned beef (chopped)
1 c. mayonnaise
16 oz sauerkraut (rinsed and drained)
1 med. onion (minced)
1 loaf party rye
1 loaf party pumpernicke


Mix all ingredients together. Bake in covered bowl or casserole dish at 350 F for 30 minutes. Serve bubbling hot and spoon on to slices of party rye or pumpernickel.

CURRY TUNA SPREAD

2 (6 ½ oz.) tuna in oil
½ c. raisins chopped
¼ c. peanuts chopped
¼ c. onion chopped
¼ c. green onion chopped
¼ c. plain yogurt
½ c. mayonnaise
1 tsp. lemon juice
¼ tsp. salt
½ tsp. curry powder


Drain tuna well. Discard oil. (Most cats and dogs love it as a treat). Blend all ingredients together well. Cover and refrigerate 2 hours. Serve on toast points or crackers.

Thanks Brooke. It poured rain all day, (There goes the snow), but folks seemed to enjoy themselves. We didn't have many left overs, so that's a sign that they enjoyed the food at least. I hope you enjoy these recipes. The curried tuna sounds strange, but it really does taste great, (if you like curry).
