Moms View Message Board: Cooking and Recipe Discussion: Poultry : Variation on Chicken Saltimboca
By Kate on Saturday, August 30, 2003 - 06:34 pm:

3 boneless skinless chicken breasts
6 slices thin deli ham
6 slices swiss cheese
2 LARGE tomatoes or enough smaller ones
4 TBS butter
1/3 cup bread crumbs
2 TBS Parmesan cheese
2 TBS parsley

Cut each chicken breast in half horizontally
Place in greased 9 X 13 pan
Fold each ham slice in half and place whole thing on each breast
Next put a slice of swiss on each one
Slice 1/2 inch slices of tomato and put one on each chicken piece, use toothpicks if necessary
Melt the butter and drizzle it over the tomato
Top with the bread crumb, Parm cheese, and parsley mix

Bake uncovered for 50 minutes at 350

YUM! EASY! And it looks kinda fancy!
