Vinegar Chicken

I know the name doesn't sound all that great, but it was very, very good. My dk's and dh liked it as well. BTW it is low carb, low sodium, low fat, and high protein (I listed the values at the bottom of the recipe).

Vinegar Chicken
serves 6

Pam cooking spray
6 skinless boneless chicken breasts, all fat removed
1 T extra virgin olive oil
6 cloves garlic, minced
Morton's Lite Salt, to taste
black pepper, to taste
cayenne
1/2 cup sodium free chicken stock (I made my own)
1/2 cup white wine vinegar
1/4 cup fresh parsley, finely chopped

Spray a large skillet with Pam, add olive oil and heat. Add garlic and saute for abt 2 minutes. Salt and pepper both sides of chicken and add a dash of cayenne to one side of each breast. Place chicken on top of garlic. Brown on both sides. Add stock and vinegar and simmer for 20-25 minutes or until chicken is no longer pink in the middle. Remove chicken from pan and reduce pan drippings until a thickened sauce forms. Pour sauce over chicken and sprinkle the parsley on top. Serve hot.
