Low carb muffins

A cup of almond flour has 10 carbs...

Muffin

This recipe uses Almond flour....

The whole recipe has about 10-12 carbs. The texture is somewhat like a corn muffin. The whole recipe makes 12 mini muffins - probably 6 standard size. Try different extracts to vary the flavor- almond or orange are both nice.

Muffins: Preheat oven to 400
Combine
4 TBS melted butter
2 eggs
Add
1/2 tsp Vanilla extract
2 TBS Splenda
In a seperate bowl mix
2/3 cup Almond flour
1/2 tsp baking powder
Mix the flour mixture into the wet mixture.
Divide into greased muffin tins (12 mini or 6 regular)
Bake about 12-18 minutes depending on the size. They
should be slightly golden brown and spring back when you gently press
the tops.

Try them with some whipped cream cheese! I hear they are also great with ground pecans.
