Turkey Teriyaki

TURKEY TERIYAKI

2 large turkey tenderloins frozen
1/2 c. water
1/4 c. soy sauce
1/4 c. sherry wine
3 T. corn starch
2 T. vinegar
3 T. honey
1 1/2 tsp. ground ginger
1 1/2 tsp. garlic powder
1 T. oil


While still frozen, slice turkey tenderloin on the diagonal into very thin slices. Combine all ingredients except turkey, oil and corn starch in container with a tightly fitting lid; shake well. Toss turkey slices in just enough marinade to coat well. Save remaining marinade in covered jar. Cover and refrigerate 2 hours.
LATER

Add corn starch to remaining marinade and shake well. Stir fry turkey meat in 1 T. oil, until opaque. Add 1/4 c. chopped celery, 1/4 c. chopped onion, 1/4 c. sliced mushrooms and a drained can of chinese vegetables. (Chopped cabbage, bamboo shoots and snow pea pods work well also). Stir fry until tender crisp, (about 1 minute. Add 3/4 c. marinade and stir until thickened. Serve with 4 cups of cooked rice.
