Onion Smothered Chicken

ONION SMOTHERED CHICKEN

6 tbs. red wine vinegar
4 tsp. sugar
1/2 tsp. dried sage
1/2 tsp. salt
4 skinless boneless chicken breast halves
2 tsp. olive oil
2 lg. onions halved and thinly sliced
1 c. chicken broth
1 tbs. corn starch
1 red bell pepper cut into thin strips
1/4 tsp. black pepper


In a shallow bowl, combine 3 tbs. vinegar, 2 tsp. sugar, 1/4 tsp. sage and 1/4 tsp salt. Stir to blend. Add chicken, turning to coat. Cover and refrigerate. In a large skilled heat oil over at medium. Add onions and remaining sugar, stirring occasionally until the onions begin to brown, about 5 minutes. Add the broth and cook untill most of the liquid has evaporated, about 5 minutes. Mix the remaining vinegar with the corn starch until smooth. Add to pan. Stir in bell pepper, remaining sage, salt and pepper. Cook until onions are caramelized, about 10 minutes. Spray another heavy skillet with cooking spray. Grill chicken over med high heat for about 8-10 minutes turning once until cooked through. Place the chicken on 4 plates. Spoon onion mixture over chicken and serve.
