Yield: 6 Servings

2 .3/4 pound pork tenderloins
1 lb Small new red potatoes;
.. halved
1/2 c Chopped onion; 1 small
5 Cloves garlic; chopped
1 tb Chopped fresh rosemary
.. -=OR=-
1 ts Dried rosemary
1/2 ts Pepper
2 1/2 c Diced fresh tomatoes; with
.. juice

1. Preheat oven to 500°. Lightly oil or spray
roasting pan.

2. Place pork in pan. Arrange potatoes around
pork; sprinkle with onion, garlic, rosemary and
pepper. Cook until pork reaches an internal
temperature of at least 150°., and is no longer
pink in center, 30 to 35 minutes. Remove meat and
potatoes; keep warm.

3. Put tomatoes in pan; bring to a boil; reduce
heat and simmer 5 minutes. Pour over pork.
