You know you're a bad cook when you ask your dh what he'd like for dinner and he says "Don't worry about it honey I'll cook something when I get home". My heart is in the right place, but sometimes the food just tastes terrible. I really am a baker not a cook. Anyway I'd like to cook a chicken tonight. Nothing fancy just something that tastes good. So if any of you have an easy recipe you'd like to share please do. TIA

Spicy Rapid Roast Chicken

Ingredients
Chicken
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper

Directions

Preheat oven to 450 degrees.

Rinse chicken thoroughly inside and out under cold running water and remove all fat. Pat dry with paper towels.

Put chicken into a small baking pan. Rub with olive oil. Mix the salt, pepper, oregano, basil, paprika and cayenne pepper together and sprinkle over chicken.

Roast the chicken in the preheated oven for 20 minutes. Lower the oven to 400 degrees F (205 degrees C) and roast until done, about 25 minutes longer for a 2 pound bird or 40 minutes longer for a 3 pound bird. Let cool 10 to 15 minutes and serve.

I have made this with a whole chicken (I dont like to cut em LOL) as well as with pieced chicken. We really like this recipe :)

Here is something quick and VERY easy that we have often. I use skinless, boneless chicken breasts (about 1 lb.) and put them in a microwaveable baking dish. Sprinkle on paprika, celery salt and some parsley flakes. My microwave cooks them on high in about 5-10 mins.. I usually nuke some frozen veggies and BOOM, there's dinner!

One of my old standbys:

Use boneless chicken breasts. Dip in egg, and coat with breadcrumbs mixed with any kind of spices you like. Brown in hot oil. Pour gravy mix (I keep the powdered stuff on hand) over the chicken, cover, and cook over med heat until all white in the middle.

Serve with mashed potatoes or stuffing and a nice veggie! Enjoy!

I sometimes make the Cream of Mushroom soup chicken. Just brown your chicken, pour in soup & add water. Then cover and simmer until done. Great with Mashed potatoes. I never knew how good this was! Everyone I know loves it!

Chicken Marsala is easy too. Just pick up either Marsala wine or cooking wine. Just saute chicken, then add pressed garlic (Fresh!!), lots of mushrooms, wine, then cook down a bit and then you can add a little corn startch or flour to thicken.

Sometimes I also pound it down and stuff it with ham & swiss and then bread. Then, I just bake it. I've also stuffed them with stuffing. Anything goes with chicken.

If you want good & not fancy, do the mushroom soup!!! You can't mess it up!

Dirty Chicken--My families favorite

You need a crockpot

one whole roaster chicken or hen
a large onion
two packets lipton soup mix any flavor I use Garlic Herb but have used any of them.

Rub the chicken all over with season-all and stuff the onion into the cavity, place it into the crockpot and sprinkle the soup all over. Cover tightly and cook on low for 12 hours or on high for 6-7 hours...when the legs move freely it is done. You can make gravy with the drippings. if I know I am making gravy I sometimes add a stick of butter but if you have Hen you won't need it.

I serve it with rice or mashed potatoes
This is very simple and very good!

Thanks ladies they all sound great. I have a whole chicken to work with and the spices in Misty's so I guess that's the one I'm going to try first.

Okay secret mom.....very clever sneaking in a recipe here and it looks very easy and good too!Now I can't remember if I mentioned this on my Q&A but now the secret is out....I'm a lousy cook.

This is one of my favorites: Fry up boneless, skinless chicken breast strips with some lemon pepper seasoning. Meanwhile, in microwave, cook broccoli florets and then when those are done cook 2 boxes of Rice-A-Roni Rice Pilaf (cut down the water to a little less than 4 cups total for 2 boxes) Serve the Chicken and Broccoli over the Rice Pilaf, or mix it all together. We call this "Chic-a-Roni" at our house :)

My family's Fav.

Bonless skinless chick.breast
1 egg
about 1 cup mashed potato flakes
1 tblsp.garlic salt
1 cup parmesean cheese
1tblsp.parsely

Combine garlic,parsely,and parmesean cheese in a frezer bag and shake each chick.breast individually
remove from bag and dip in egg then mashed potato flakes
Place in a glass baking dish at 350 deg.for 45 moutes or intil lightly browned.

CREAMY CHICKEN CASSEROLE
****************************************************************

INGREDIENTS
2 cups cooked chicken, cubed
9 ounces frozen mixed vegetables, slightly thawed
2 cups elbow macaroni,uncooked
1 cup American cheese,shredded
10 3/4 ounces condensed cream of celery soup
2 cups water
1/2 cup plain bread crumbs
2 tablespoons margarine or butter, melted

DIRECTIONS:
In large bowl, combine all casserole ingredients; mix well. Pour
Into ungreased 8-inch square (1-1/2 quart) baking dish. Cover
tightly; refrigerate 8 hours. Heat oven to 350°F. In small
bowl, combine topping ingredients; mix well. Stir casserole;
sprinkle with topping of 1/2-cup bread crumbs and 2 tablespoons
margarine or butter, melted.. Bake at 350°F. for 45 to 55 minutes
or until bubbly and golden brown.

YIELD: 6 servings
