Mini Corn Dogs

This has got to be one of the easiest recipes ever!! And the kids just love it!!

1 cup pancake batter mixed according to package directions
2 pkgs. 8 count hotdogs
Heat oil to 365 degrees. Cut hotdogs into bite sized pieces. Roll hotdogs in batter until well coated. Fry 8-10 minutes or until lightly browned. Drain on paper towels. You can either use a fry daddy or a few inches of oil in the bottom of a skillet works just fine.

I also used this recipe for onion rings, slice white onions, seperate, soak in the batter and to the pan or fry daddy they go. NOTE: If using a fry daddy, do not use the basket for either of these recipes, just put them in and they float to the top, otherwise they will stick to the bottom of the basket, making it very hard to remove. You guessed it, I tried that LOL!

It does sound good doesn't it.... So easy. I guess you need the oil hot to start....

I made homemade corndogs once and they were sooo good. I don't make them very often since hubby and I have blood pressure problems and can't eat a lot of sodium.
