Basic Dinner Rolls/Bread Sticks......

recipe taken from my West Bend bread machine book.

I mix the dough in machine and finish in oven. I will add info for cooking w/out machine as well.

8oz (1 cup) /waterm 75-85 F
3 tbs Butter
3 cups Bread flour
3 1/2 tbs Sugar
2 tbs dry milk
1 tsp salt
1 1/2 fast rise yeast
beaten egg white

Add water and butter to bowl

Add all dry ingredients, except yeast then pour onto water/butter. Level ingredients covering all water area. Make a well in center of dry ingredients and add yeast.

Begin to stir dough mix. 5 min
Knead 20 min
rise 55 min
stir-down 30 sec

Place dough onto floured surface. Let rest 15 minutes.

Finish as desired following shaping instructions (I just shape the way I want: clover rolls, cresent, round buns, entire loaf-makes two--) Place on greased baking pans or sheets, cover and let rise in warm, draft-free place until double in size, about 45 minutes to 1 hour. Brush w/ egg (I use entire egg plain, or with honey. I also top w/ sesame seeds) and bake in preheated 350 F oven for 15-20 minutes or until golden brown.

We made these for lunch today. I didn't brush egg on them and mixed 1/3 whole wheat flour to 2/3 white flour. All the kids except Randy, plus dh (he's home today for MLK Day) and I liked them. VERY yummy! :)
